They have a more concentrated shrimp flavor and have a slightly more tender texture , but still firm, than the hoppers. They tend to run smaller than the Canaveral Whites and have a beautiful golden brown color. They are amazing in boils and are extremely versatile and can hold up well with sauces; perfect for jambalaya.
