Ridge Vineyards Cabernet Sauvignon Blend York Creek 1991 FOR-35 combined with the spice andWinemaker Notes: After a late start, and formation of a good crop at set, warm fall weather fully ripened the York Creek franc by late October. At crush, half the fermentors included uncrushed, whole clusters to enhance varietal fruit and moderate tannins. We fined most of the franc early and aged it for fourteen months in air dried american oak. Two months before bottling we added petit verdot to enhance definition and complexity.
