Pascal Janvier Jasnieres Cuvee du Silex 2018 sku_2324175 The New York Times (2/6/08)This "Cuve du Silex" is the reserve bottling of Pascal Janvier. The soils are flint dominated and the resulting minerality is astounding. This is made from Chenin Blanc and comes from the tiny appellation of Jasnires due north of Vouvray. An unctuous white that's full of raw honey, chamomile, and white flowers. Delicious, supple, and an excellent companion to soft and hard cheeses. Enjoy the distinctly earthy tones of forest floor and gunflint.
